Food: ricotta pinwheels

This easy recipe inspired by another similar recipe by a sweet sister of mine -  for those of you who do not like to be in the kitchen for too long. Or you have completely run out of time to make a dessert item.  This could be your go-to recipe to make.

Ingredients are,
15 oz whole milk ricotta cheese :: 1/2 cup jaggery or mollasses (patali gur)
1/4 tsp cardamom powder :: 2 puff pastry sheets :: pinch of salt
Cooking Spray + Baking Sheet


At first, the jaggery and the ricotta needs to be mixed in a pan on the stove. You can use any kind of natural sweetener for the sugar. The jaggery gives a nice flavor to it. Add the pinch of salt and the cardamom powder when everything is incorporated. When you add the sweetener it turns liquid - so make sure to keep it on the stove till the liquid evaporates and the mixture is thick and creamy. The oven needs to be set to 400 degrees. 

Roll out the pastry sheet and then spread the ricotta all over the sheet with a knife. 

Slowly roll the sheet with your hands.

Once the roll is complete, wrap it with plastic and keep it in the freezer until it hardens. If it is not, then you won't be able to cut out the pinwheels. 

Take out the roll from the freezer and slice up the pinwheels. If they are not perfectly round just use your fingers to mold them to perfection.

Spray the baking sheet lightly with oil/butter. Lay them down by keeping enough space between them becuase they will rise on all sides. Bake them at 400 degrees for 15 minutes. Enjoy!
