Food: chicken+goat cheese meatballs pasta

The star of this dish is the meatballs and the pasta is made to combine it into a recipe. While making them I did not realize it would turn out so good. The cheese actually acts as a binding ingredient which also keeps the inside of the meatballs moist. You can make the pasta however you like once you have the meatballs. You can also incorporate the meatballs into an all together different recipe.

For the meatballs,
1 chicken breast chopped into tiny little pieces (or ground chicken) :: 1 oz goat cheese
1/2 onion chopped thinly :: 1/2 a cup chopped parsley ::  cloves of garlic minced
1/2 tsp red chili powder :: 1/2 cup bread crumbs; salt :: lime juice

For pasta,
1 bag of pasta :: 1 tin of anchovies :: 4/5 garlic cloves minced :: 1/2 onion chopped
1/2 cup peas :: 1/2 cup corn :: 1/2 cup soybeans :: 1 small can of tomato sauce
1 tsp red chili powder :: olive oil :: salt+pepper+pinch of sugar :: parmesan cheese

Mix all the ingredients for the meatballs together except for the lime juice.

It should bind easily to make nice little meatballs. If it breaks open, add some more bread crumbs. Make the meatballs before you throw them in the oil.

Fry each side until it catches color. After all of them are done, squeeze lime juice over the hot meatballs.

Take a large pot of water to boil and cook the pasta in it. Meanwhile heat a flat pan and add the olive oil. Add the anchovies and stir until it mixes in with the oil like a sauce. You can skip the anchovies but trust me it adds flavor. And its not like you are going to smell fish or anything like that. Lets move on. Add the minced garlic and the onions. Sauté for a bit and then add the vegetables. You can add your choice of vegetables too. After a few minutes of stirring add the tomato sauce. Add half a cup of water at this time. Then the spices and taste. Add the meatballs and keep it covered at medium low. The oil will rise up and you will know that its ready to be mixed with the pasta. Grate some parmesan over your pasta and eat! Bon appétit!

    2. Hello Anonymous,

I have calculated the caloric amounts! So the entire dish with the addition of a whopping cup of parmesan cheese comes to 2600 calories. And there area easily 6 hefty servings in this dish which gives each person 433 calories.
