Food: cooking snake beans

No, I am not cooking snake meat - it's snake beans. Maybe because it is super long unlike regular green beans. These beans definitely have more flavor than green beans. I buy it from the local Asian market. Per my best friend's request I am sharing this recipe with you. I love this vegetable myself.  I have added one medium potato with the beans in this recipe but you can substitute it with something else or skip it altogether.

Here are the few simple ingredients,
1 pack of fresh snake beans chopped 1" long pieces :: 1 medium red potato cut in similar shape
1 shallot thinly sliced :: 1/2 tsp red chili powder :: 1/2 tsp turmeric powder
1 green chili chopped :: salt+canola oil+pinch of sugar

After washing and chopping up the beans boil them in water for 15 mins. Unlike green beans, snake beans take a while to cook. Boiling them in water first will retain the color of the dish.

Heat oil in a flat pan and toss the drained beans along with the potatoes, shallots, green chili, and the spices+salt.  Basically everything. Cover and cook and stir often until everything is cooked through. Bon appétit!
