Food: chola = chickpeas

This recipe is in dedication to this holy month of Ramadan. This is a very popular and healthy item in an Iftar(breaking of the fast) menu. Here goes the ingredients:

4 cups of the small black chickpea
2 cans of the large yellow chickpea
3 large potatoes
1 large onion
2 large tomatoes
1 tbsp ginger grated
1 tbsp garlic grated
1 tbsp red chili powder
1 tsp turmeric
1 tsp coriander powder
1 tsp cumin powder
1/2 cup oil
salt

 The small black chickpeas do not come cooked in a can. So you have to soak it overnight.



Then these chickpeas need to be pressure cooked before you can start the actual cooking. I kept them for 25 mins inside the pressure cooker.

Now it is time to put everything together. First heat the oil in the pan. And then fry the sliced onions until they are golden.


At this time, add the grated ginger/garlic along with all the spices in the pan. Fry everything for about a minute.

 Then pour the pressure cooked black chickpeas along with its water all into the pot. Also add the 2 cans of yellow chickpeas at this time. Add salt and cover and cook over medium heat.

 After about 15 mins or when the water has started to subside, take a potato masher and mash some of the peas while still cooking inside the pan. This will add a nice thick consistency in the dish and will also enhance flavor.

 Once all the water has subsided, add the chopped up potatoes and tomatoes. Fry everything together and then add about a cup of warm water and keep covered in medium low heat.

Once the potatoes have cooked, check for salt. Before serving, add 1/2 tsp more cumin powder for aroma. Eat this with a cucumber/cilantro salad.
