Food: plantain cutlets

Plantain falls in the list of my favorite vegetables. I have been experimenting with various plantain cutlet recipes. Mainly this cutlet is made from potatoes (refer to my tuna potato cutlets). To be able to eat less potatoes, I strive to add nutritional foods to these cutlets. So you have seen the one with the tuna, and now lets look at plantain cutlets. This recipe only has one potato mainly for bonding purposes and also of course for taste! So, this is what I have used,

4 green plantains (try the fat short ones for better taste and softness)
1 medium russet potato :: 1 egg; 1 medium onion sliced thinly :: 5/6 green chilis chopped :: salt
1 tbs lemon juice :: 1 tsp red chili powder :: 1/2 tsp cumin powder :: 1/2 tsp coriander powder 
1/2 tsp garam masala powder :: 1 cup cilantro chopped :: oil and eggs for frying

Bring a large pot of water to boil where the plantain and potatoes will be cooked. Place the potatoes in large cut pieces and place the plantains with their skin on. Just cut the two ends off and then cut the plantain in half and place in the boiling water. The skin is very good for you and it will  mix in with everything. Just make sure to boil it enough so that everything mashes well together. Prepare all of the spices and condiments together in one big bowl where you will be adding the starches. 

Mix everything together using your hands.

Drain the water out of the plantain and potatoes and place it with your spice mixture.

Use a masher to mix everything well. At this time the plantain skin will also mash and mix into everything. 

Make small to medium sized patties from the mixture. You do not need to make these patties and set aside before you fry them. Instead beat 2 eggs and set a pan on the stove to heat up. I shallow fried these. You can also bake them if you wish. When the oil is heated, make these patties and dip them in the eggs and then throw them in the oil. These patties will be very soft and therefore will be easy to make within seconds using one hand. And yeah, they don't need to be perfectly round or anything. Enjoy your cooking just like your eating!
