Food: tofu+cabbage [vegetarian feast]

Honestly, I was making tofu curry when things turned around and I ended up making a stir fry of tofu with sweet cabbage. Maybe some other day I can share the tofu curry with you all. I hope I am not overwhelming you with all the tofu madness. We are trying to eat more vegetables. Hence this vegetarian feast! I paired the tofu+cabbage with helpings of spinach and sweet potato+peas. The sweet potato and peas go so well together that I must share that recipe soon. For now, enjoy this one.


Ingredients,

1 pack extra firm tofu :: 1/3 cabbage sliced :: 1/2 onion sliced :: 4/5 garlic cloves grated
1/2" ginger grated :: 1 tsp red chili powder :: 1/3 tsp turmeric :: 1/3 tsp coriander powder
1/2 tsp cumin powder :: 1/4 tsp garam masala powder :: 1/2 tsp crushed red pepper
2 dried red chilis :: salt+oil+pinch of sugar

For this recipe, I cut the tofu a bit thin and flat so that they catch the aroma of the spices well. 

Take the dry ingredients with some salt and mix it with some water.

Then take the tofu pieces and rub the spice mixture well with the tofu.

Heat oil in a flat pan, and fry the tofu. This will not only flavor the tofu but it will also make the tofu more firm drawing the water away from inside of the tofu. 

Once the tofu is fried, keep it aside. Use the same pan and fry the dried red chilis in some oil until fragrant. 

Chop up the onions and grate the garlic and ginger.

Fry the onions in the oil with the dried red chilis. 

Once the onions are soft, add the garlic and ginger. Toss everything around for a minute.

Add the sliced cabbage. Throw some salt and cover to let the cabbage sweat.

Once the cabbage is cooked, toss in the fried tofu. Sprinkle a pinch of sugar to bring out the flavors even more. This is a spicy dish. You can control the level of chilies according to your spice level. We paired this dish with more delicious vegetables but you can enjoy this with rice or other carbohydrates. Bon appetit!
