Food: one pot pasta with eggs

Usually when we make pasta dishes, the pasta is boiled and the sauce is cooked separately. However, this recipe brings those two steps together cutting cooking time in half. How exciting right? This is one of those recipes on a weeknight when you don't have any time - all you need is pasta and eggs and a few things from the pantry. And then you mix everything in a pot [yes even the dry pasta] and stir until cooked. 


Ingredients,

12-14 ounce spaghetti [usually how much a regular box contains] :: 5 eggs
1 can stewed tomatoes :: 1 onion :: 5/6 garlic cloves :: 1 tsp red chili flakes
olive oi+salt+parmesan+basil

I used whole grain pasta. 

Thinly slice the onions and the garlic. Take the stewed tomatoes out and crush them. You can use fresh tomatoes or other canned forms. Chop up some of the basil. Add the olive oil and the salt+red chili flakes and mix everything together in a large open pan. 

Arrange the spaghetti over this mixture.

Add 4 cups of water over everything.

Place it on a stove that is set to medium. Once the water starts to boil and the spaghetti softens, start stirring. Do not cover. Stir often and let the pasta cook and the water evaporate. This is how it will be cooked. When there is just one layer of water at the bottom, add the parmesan cheese. Stir and then break each egg one at a time over the pasta. Sprinkle sat+pepper over the eggs and now keep it covered for just a few minutes. Before serving sprinkle more parmesan and basil. Bon appétit!
