Food: savory sweet potatoes [baked]

This is my number one way of making sweet potatoes. I usually bake these a couple of times in a week for dinner - as a side dish to any of my entrées.  You can devour them just like this or add them to a another recipe. And it has way better nutrition than regular potatoes. Serve these baked medallions under a poached/fried egg and there is breakfast! 

Take a good baking tray - one that does not require a foil or parchment to bake. Baking on the tray gives the potatoes a color on the back as well as on the top. Foil/parchment will hinder that. Spray wil cooking oil [olive oil]. Cut the sweet potato in medallions. Place each down on the tray. Now spray one more time over the potatoes. Sprinkle salt and fresh cracked pepper. You can also sprinkle some hot chili powder or cayenne for that extra kick. If you can't live without cheese, then top them with some grated cheese. Bake at 350 for 40 mins. Bon appétit!
