Ever since I learned to make my own homemade dressings, I stopped buying store bought ones. You can make any of them at home if you wish to and they will be super healthy since you know what all the ingredients are! This cilantro lime dressing is absolutely delish - I can eat it just by itself! But it tastes even better over fresh salads or even fresh fruits.
A few simple ingredients,
handful of fresh cilantro; juice of half a lime; 2 tbs greek yogurt; 2 cloves of garlic; 1 green chili
1 1/2 tsp vinegar; 1/3 cup olive oil; 1 tsp honey; pinch of salt salt
The Greek yogurt is important since it will help the dressing to be creamy. Regular yogurt can turn this dressing runny. I added the green chili for a little kick. Leave it out if you are not a fan.
Place everything in a food processor [or magic bullet] and pulse till you achieve the consistency you want. Adjust the salt and the honey to your liking.
For the salad I used,
1 can of chickpeas; 1 cucumber; 10/12 cherry tomatoes; 1 jalapeno; 1/2 red onion; 1/2 cup corn
Add some fresh fruits like mangos or berries into the salad for extra yumm.
Save the rest of the dressing in the fridge for later devouring! Bon appétit!
