Food: simple supple spinach

Advised by my dearest friend, I am trying to add more simpler recipes - recipes I always include in our food habit. Spinach is a type of leafy green that is easily added into dishes rich or fresh and also blended in smoothies nowadays. I try to sneak in spinach into many of my dishes, but I would like to share a dish made just of simple spinach itself. This spinach dish is ready to be devoured just as it is, or can be used to add into other recipes. 

So here it is, 
2 bunches of spinach :: 10/12 cloves of garlic thinly sliced or chopped
1/2 tsp red chili powder :: 1/2 tsp turmeric powder :: salt+oil



When using spinach bunch, the first thing to do is to wash the spinach thoroughly. There is usually soil trapped inside the leaves which needs to be washed out. Otherwise you will feel it when you are eating it. The best way to wash spinach is to fill the sink with cold water and lay the spinach leaves into the water. If there are any root ends on the spinach, cut them off. You can also use a large pot of water if you don't want to use the sink. Give the spinach leaves a gentle shake - this will separate the dirt from the spinach and the dirt will move down into the bottom of the sink. Shake them some more. And then let it rest for about 5 minutes. Then pick them up gently so as not to disturb the dirt that has accumulated at the bottom. Roughly chop the spinach leaves and finely chop the stems. 

Heat a flat pan with oil and then toss in the sliced garlic cloves. Just for about a minute till its fragrant. Spinach and garlic are made for each other. 

Heap the pan with the chopped up greens and cover the lid. Let it wilt. This will all be done at medium high temperature. 

Once it has wilted, mix in the chili, turmeric and the salt. Stir and cook till the spinach is cooked through. The spinach will let out a lot of water. I usually cook until the water dries up but the spinach is still moist. Bon app├ętit!
