Food: eggplant+tomato sandwich

These two vegetables - eggplant+tomato - are my husband's absolute favorite! What makes him happy the most is a dish with both of these ingredients in it. I tried a new sandwich with them and it turned out super delish and super easy. Here is what I used,

1 medium sized long eggplant sliced thick :: 1 tomato thinly sliced :: 1 egg :: 1/2 tsp chili powder
whole grain sandwich bread toasted :: gouda cheese slices :: olive oil :: salt+pepper
mayonnaise :: horseradish spread :: pesto spread
dijon mustard spread [for making 2 sandwiches]

First we are going to fry the eggplants coated in an egg mixture. I took one egg, some salt and the red chili powder and mixed it in my magic bullet. 

I coated each slice of eggplant in the egg mixture and fried them in my iron skillet in the olive oil. 

I made two separate sandwiches. One had mayo and mustard while the other one had pesto and horseradish - spread on each side of the breads. Then I layered the cheese slices, topping it with the fried eggplant and then the sliced tomatoes. 

I had some of the egg mixture left over which I scrambled in the skillet. I used that to top the tomatoes. Finally sprinkled some salt and fresh pepper - viola! Enjoy this sandwich with pickles on the side. Thats what we do!

  1. This sandwich looks absolutely incredible! I love eggplant in any form, but have never thought of putting it in a sandwich! Genius!
